1 sleeve Ritz Butter Round Crackers (about 30 crackers), crushed - $2.50 for a 13.7 oz box
1/2 cup Unsalted Butter, cut into cubes- $3.00 16 oz Meijer Butter Quarters
1 tsp salt
1 tsp black pepper
1/2 tsp garlic powder
1 1/2 lb of your choice mixed vegetables. I used a combination of broccoli, mushrooms, red peppers and potatoes. - all on sale at Meijer this week for $1 each.
1/2 cup buttermilk
Instructions:
1) Preheat the oven to 375 degrees
2) Chop up the veggies to about 2 inch pieces, They do not need to be perfect, you just want them to be a good size to be able to take the coating evenly. Pour the buttermilk over them and mix gently to get them lightly coated.
3) In a Large bowl, mix the crushed crackers, and the remainder of the dry ingredients. Dump the chopped veggie mixture into this and use a big spoon to mix and coat the vegetables with the cracker mixture
4) Place this mixture in a 9x13 baking dish. Scatter the cubes of butter around this mixture in the baking dish and bake for 20 minutes, until the the veggies are properly baked
5) Let cool for 5 minutes before serving. Enjoy!
