Happy Friday!
The weather is starting to warm up in Michigan (62 degrees today!) which inspires me to give up the comfort foods and branch out with a lighter meal with the warmer temps.
This week Meijer has some great deals on Organic produce. That was the inspiration to create this meal. Whenever I can eat an Organic Meal with items I bought on sale, it is a good day!
Recipe:
1 package of Earthbounds Farms Organic Spicy Spinach Blend- 2 for $5
1 4 pack of True Goodness Portabella Mushrooms- $3.49
1 6 oz package of Nikos Crumbled Feta Cheese- $3.99
1/2cup True Goodness Walnuts- $3.99
1 tablespoon of Olive Oil
1 teaspoon garlic powder
1 teaspoon salt
1/4 water
1/3 cup balsamic vinaigrette dressing
Warm up the skillet on Medium Heat and add the oil. Once hot, add whole mushrooms into the pan in a single layer. Sprinkle the water onto the mushrooms and do the same with the garlic powder and salt. Cover and let it cook for 6-10 minutes, rotating the mushrooms every minute or so. If the water is evaporating too quickly, add some more in to keep them moist. Remove when softened, and let cool for 5 minutes. Cut each mushroom into 5 big pieces.
In a separate bowl, add the salad in. I tend to cut the pieces with a kitchen scissor to make the pieces manageable as at times they can be quite big. Next add the mushroom pieces and walnuts. Pour the dressing into this and gently toss to evenly coat. Top with Feta Cheese.
Serve immediately with a side of your favorite bakery bread. Enjoy!
