Meatless Friday- One Pot Asparagus Pasta

One pot pasta is a dish that never gets old at our house.  The clean up is awesome and no one would ever believe you were able to make this great dish in under 1 hour.  If you are not an asparagus fan, you can substitute any vegetable. 

This week Meijer had the 24 ounce jar of Bertolli Riserva sauce on sale.  If you have not tried this sauce yet, you are missing out.  This sauce is amazing and really can fool folks into thinking you made it from scratch.  That is my kind of sauce!  Note: for this recipe you can use any jarred pasta sauce.  


1 24 ounce jar of Bertolli Riserva Porcini Mushrooms with Truffle Oil sauce- $4.99
1 pound Meullers Linguine broken in half- $1.25
1 pound Asparagus (white or green)- cleaned and chopped in thirds - 2.49/lb
52 ounces Swanson vegetable broth- 1.99 for 32 ounces container
1 tablespoon butter
1 tablespoon olive oil
3 garlic cloves, minced
1 teaspoon crushed red pepper flakes

In a very large 10 inch skillet on medium heat heat the olive oil and butter together.  Add in the minced garlic and saute for 3 minutes.  Add the Sauce, the Vegetable Broth and crushed red peppers and stir well.  Next, add the broken linguine and stir it gently.  Increase heat to Medium High and bring it all to a boil.  Once all to a boil, reduce heat to medium low and let it cook for 15 minutes, stirring frequently to prevent the pasta from sticking together.  Add the chopped Asparagus to the mixture and stir.  Let it cook for another 5 minutes and then remove from heat.  If pasta seems uncooked, add another 1/4 to 1/2 cup water and and keep cooking.  The key is you do not want your pasta to stick to the pan and get dried out.
