We listened! Based on your feedback, we will be offering a weekly healthy recipe to our readers that will be include ingredients that are on sale at a local featured Grocery chain. These recipes will be quick and easy and allow you to feed your family a healthy meal on a budget.
This weeks recipe is Mexican Bake from ingredients purchased at Meijer. If you still have your BirdsEye and Kraft Cheese coupons, now is the time to use them!

What you will need:
1 12.2 oz Bag of BirdsEye Steamfresh Protein Blend Southwest Style - On sale 3 for $5
1 28 oz can Old ElPaso Enchilada Sauce - On sale 2 for $4
1 8 oz bag of Kraft Mexican Blend Cheese - On sale B2G1F
1 package Meijer Flour Tortillas- 8 count- On sale $1.69
That is right.... only FOUR items! It will take you 30 minutes including baking time!
Preheat oven to 425 degrees. Microwave the BirdsEye package as stated in instructions. Pour 1/3 of Enchilada Sauce in the bottom of a 9x13 oblong baking dish. You want to cover the bottom completely. Next make a single layer of the tortillas on top of this sauce. You will have to break them to make a single layer. Next take the cooked bag of BirdsEye mix and spread it evenly on top of the tortillas. Add a layer of cheese and then another single layer of tortillas. Finally dump the remainder of the Enchilada sauce on top of the tortillas. Make sure it covers all of the tortillas evenly. Cover and bake for 20 minutes (or until sauce is bubbly) . Uncover and add remainder of cheese for topping. Bake uncovered till cheese melts.
Let sit for 5 minutes before serving. You can eat this alone, or serve it with a salad and a side of tortilla chips.
